Grandpa Cooks: Recipes from his Kitchen and

Burrito-ladas (Burrito Enchiladas)
Ingredients
One can enchilada sauce
4-6 oz. of cheese
One large onion, chopped
One can black beans
½ cup rice, cooked
5 large tortillas
1 tablespoon olive oil
½ tablespoon chili powder
½ tablespoon ground cumin
salt
Directions
In a heated skillet, sauté the onions in the olive oil (dash
of salt will help sweating)
When the onions are soft, but not brown, add the black beans.
Bring the mixture to a simmer for about a minute, let the juice
reduce and thicken.
Add the rice, cumin and chili powder.
Preheat your oven to 350 degrees.
Grease a 9x9 pan.
On each tortilla, place about 1/5th of the rice and beans.
Sprinkle some cheese on the mixture.
Roll tortilla into a burrito (directions are usually on pack)
Place the burritos side by side in the pan, cover with sauce and
cheese.
Bake, uncovered, for 20 minutes.
Serves 1-2
Suggestions
1. If you double or triple the recipe, add meat, more beans or red
peppers, you can eat for days.
2. To make look pretty, place sliced jalepeno pepper slices on top
before you bake.

How to Drink 96 oz. of Mountain Dew and not Piss Yourself
Ingredients
6-7 Hour Drive from Albany, NY to Baltimore, MD
3 32 oz. Servings of Mountain Dew
Light snack.
Directions
It's important to start drinking before you get on I-87.
Buy your first Dew when you gas-up.
The first Dew should carry you until you reach New Jersey.
Eat some of your wife's chips or butter flavored popcorn.
Towards the end of your drive on I-287, or as soon as you get on
Route 1, get another Dew.
Before you get in the car, pee in a restroom.
Before you cross the Delaware Memorial Bridge, you should pee and
get another Dew.
Your last bathroom stop should be at the Chesapeake House.
At the Chesapeake House, you should pee at a stand-up urinal.
Some of the Stand-up urinals there have dividers between them. Use
the dividers to rest your elbows while you take a leak. It's gonna
take a while, and you may need to hold yourself up anyway.
When you get home, unpack your clothes and get some sleep.
Pizza Quesadillas (actually Bigfoot's)
Ingredients
6-8 flour tortillas
4 oz. of shredded mozzarella cheese
Some shredded parmesan cheese
A sun-dried tomato spread
Directions
Bigfoot came up with this one day. She added some sautéed
spinach, which was wonderful.
Pre-heat your oven to 350 degrees.
Lay out half of the tortillas on a big old baking sheet.
Spread some of the sun-dried tomato spread on the tortillas.
Sprinkle the cheese on top of the spread.
Place the other tortillas on top.
Put in oven for, like, 10 minutes or until slightly brown on top.
Cut up and eat 'em like a fool.
